I’ve never been a big fan of lobster but I am a HUGE fan of halibut and guess what? It’s in season right now! Costco has been selling some lovely thick slabs of halibut for around $17 per pound. It’s not cheap, but hey, it’s cheaper than lobster!
My absolute favorite way to prepare halibut is super simple, quick, and melt in your mouth delicious. It’s called “Poor Man’s Lobster” and if you know how to boil water, you can make this dish! It’s gluten free, Slow carb diet friendly (4 Hour Body), Paleo diet friendly (replace butter with macadamia nut oil), and extremely healthy and delicious.
Here are all of the ingredients you need for this recipe:
First, start off with a nice, fresh, thick slab of halibut. (Don’t know how to pick out a good piece of fish? Read my article “How to pick out really fresh fish.”) The tail end is generally thin and will not do. Cut your fish into 1.5-2 inch cubes.
All of your cubes should be around a similar size.
While you’re doing this boil some water in a 3 quart pan (bigger is fine, but not much smaller)
Add 1-2 tsps of salt once the water is boiling. Redmond Sea Salt is my favorite.
Add halibut chunks gently to boiling water (a full rolling boil will break up the fish) with a slotted spoon. Do not crowd. It you have a lot of fish use a larger pan or boil in batches. Melt butter while fish is cooking (microwave is fine).
Let the halibut cook until it tests done with an instant read thermometer or until it flakes apart (be careful not to over cook as then you will have Poor Man’s Rubber, instead of Poor Man’s Lobster). Remove with a slotted spoon.
Serve immediately with melted butter and savor every bite.
