The now popular light and refreshing cocktail, the Mojito, originated in Cuba. With a sparkling combination of lime, mint, and white rum, it’s no wonder that the Mojito is now featured on cocktail menus nation wide.
I wanted to take the flavors of the Mojito, lose the rum, and add ingredients that would be both filling, and complementary to the lime and mint combination. This led me to this recipe for my Mojito Morning Smoothie. It’s definitely one of my favorites and I think it will become one of yours as well.

Mojito Morning Smoothie
A refreshing and cleansing combination of lime and mint make this a favorite at my house.
Recipe type: breakfast
1 scoop vanilla whey protein powder
Rind and juice of ½ lime (if you have a Vitamix just throw the entire half of a lime in there)
5-6 fresh mint leaves
½ cup packed spinach leaves, rinsed
¼-1/2 of an avocado
½-1 cup coconut milk or liquid of your choice (raw milk, almond milk, water)
1 cup ice
3 drops liquid stevia
Add all ingredients to a Vitamix or high speed blender. Blend, adding more coconut milk or liquid of choice, to achieve the desired consistency.
*If you're like me and dairy is not your friend I highly recommend Pumpkin Seed Protein Powder. It's unflavored, yet imparts a slightly unique flavor which isn't bitter (like some), but almost earthy. It's anti-candida friendly and quite healthy for a protein powder. If you prefer to have a "whole" food alternative to the protein powders simply use cottage cheese, raw milk, or, in the case of the pumpkin seed protein powder, use Pumpkin Seed Butter.
