Curried Coleslaw Recipe

I’ll be in Ireland for Easter this year, so I thought I’d share a side dish with you that has a little bit of Irish infusion in it (cabbage) and is perfectly paired with traditional ham served for Easter. This Curried Coleslaw recipe is a fun tweak on the norm and has a really nice balance of flavors, while being neither too heavy or hearty.

There’s always a plethora of cabbage leftover from St. Patrick’s Day in stores, and since it lasts forever in the fridge,  I usually swipe a head or two and make coleslaw for Easter. Or, if I’ve gone through all of my homemade sauerkraut, I’ll make enough to get me through to late summer, when cabbage is ripe and juicy.

Homemade mayonnaise makes this coleslaw really tasty, however, if eggs aren’t your friend, or you want to keep this vegan, you can use my homemade coconut milk mayonnaise, or something like Vegenaise and you really can’t tell the difference. Curried Coleslaw Recipe


I got this recipe out of a newspaper years ago. I wish I could credit the author, however it isn't listed. You'll love this crispy, creamy curried coleslaw (say that 5 times!).

  1. 1 small head green cabbage, shredded

  2. 1 medium carrot, shredded

Dressing Ingredients

  1. ¼ cup rice vinegar

  2. 1 Tbs. lemon juice

  3. ½ cup mayonnaise (learn how to make homemade here)

  4. salt and freshly ground pepper

  5. 1 to 2 tsp. curry powder

  6. 1 to 2 tsp. organic granulated sugar, honey or sweetener of choice.


  1. Shred cabbage and carrot in a food processor. Put in a large bowl.

  2. In a separate bowl mix together dressing ingredients.

  3. About an hour before serving, mix half of the dressing with the coleslaw. This will keep the coleslaw from "drowning."

  4. Taste and adjust the flavor as desired.

  5. Cover and refrigerate the slaw and leftover dressing separately. Before serving, stir slaw, adjust taste if necessary and add the reserved dressing.
