Paleo Almond Butter Blondies
Moist, chewy, and filling, this Paleo/grain and dairy free blondie is bound to become a family favorite
  1. Preheat oven to 350 degrees
  2. In a large bowl (I use my Kitchen Aid), mix almond butter and honey
  3. Add egg and vanilla and mix until well incorporated.
  4. Add coconut flakes
  5. Sprinkle in baking soda and powder
  6. Add chocolate chips
  7. Scrape contents into an ungreased (preferably glass) 8" square baking dish
  8. Press firmly into pan
  9. Bake for 18-24 minutes or until a toothpick inserted in center comes out with dry crumbs.
The dough will be quite firm and very oily seeming. Don't worry, it will come together when baked!
*If using a messed up batch of homemade almond butter add 1-2 Tbs of coconut oil to the mix.
