  1. Preheat the oven to 350 F.
  2. Grease and flour an 11x7" baking pan, a bundt pan, or 2 loaf pans.
  3. Sift together the dry ingredients (first 9 ingredients- NOT the sugar) in a medium sized bowl.
  4. Whisk the minced ginger with the dry ingredients (this helps it disperse evenly throughout the gingerbread).
  5. Beat the butter, molasses, sugar, milk, and egg in a large bowl by hand or with an electric mixer on low speed.
  6. Scrape down sides as necessary.
  7. Add the dry ingredient mixture to the wet, and mix until just barely incorporated.
  8. Remove from mixer, and mix with a spatula a few times to make sure ingredients are thoroughly combined.
  9. Pour the batter into the prepared pan and smooth the surface.
  10. Bake for 30-40 minutes or until the top springs back when lightly touched, and the edges have slightly pulled away from the pan.
  11. Cool on a wire rack and serve warm or at room temperature, preferably with whipped cream.
Notes
*If crystallized ginger is not available, simply add 1 extra teaspoon of ground ginger.
